Spiced tea with honey is an easy way to bring together black tea, warming spices and the floral sweetness of honey. This chai-style recipe works hot on a cool morning or poured over ice when you want something refreshing.

The key is balance: tea gives structure, spices provide aroma, milk is optional, and honey rounds everything out without needing to dominate the drink.

For another approach, see our the broader honey cinnamon tea guide, or explore the traditional honey use in Ayurveda for related guidance.

Ingredients

For 2 cups:

  • 500 mL water
  • 2 black tea bags or 2 teaspoons loose black tea
  • 4 green cardamom pods, lightly crushed
  • 1 small cinnamon stick
  • 3 to 4 thin slices fresh ginger
  • 2 whole cloves, optional
  • 120 mL milk or unsweetened plant milk, optional
  • 1 to 2 tablespoons honey, to taste

For iced tea, allow extra ice and slightly increase the tea strength so the flavour stays clear after dilution.

How to make hot spiced tea with honey

  1. Add the water, cardamom, cinnamon, ginger and cloves to a small saucepan.
  2. Bring to a gentle simmer and cook for about 5 minutes so the spices infuse the water.
  3. Add the black tea and steep for 3 to 4 minutes, depending on how strong you like it.
  4. Add milk if using and warm gently. Do not keep boiling once the milk is in.
  5. Remove from the heat and strain into cups.
  6. Let the tea cool slightly, then stir in honey to taste.

Adding the honey at the end gives you better control over sweetness and helps preserve more of its aroma.

How to make iced chai with honey

For iced chai with honey, make the tea slightly stronger than usual. After straining, stir in the honey while the tea is still warm enough to dissolve it easily. Cool completely, then pour over plenty of ice.

Add a splash of cold milk if you prefer a creamy iced chai, or leave it black for a cleaner spice profile.

What spices go well with honey tea?

Cardamom and cinnamon are the easiest starting point. Ginger brings warmth and a fresh edge, while cloves add depth. Other options include:

  • a small piece of star anise;
  • a few black peppercorns for extra heat;
  • a tiny pinch of nutmeg;
  • fennel seeds for a sweeter aromatic note.

Use strong spices sparingly. Honey should support the drink rather than having to fight against an overloaded spice mix.

What type of honey works best?

A mild honey lets the tea and cardamom lead. A fuller Australian honey can add a deeper caramel or herbal note, especially in milk-based chai.

If you are using a premium honey with a distinctive aroma, start with less than you think you need. You can always add more after tasting.

Can you put honey in chai?

Yes. Honey works very well in chai-style tea. The only practical consideration is temperature. If you prefer to follow traditional Ayurvedic convention, add honey after the tea is removed from the heat rather than boiling it with the drink.

That traditional convention is a cultural food practice, not a reason to make dramatic claims about ordinary heated honey.

Make it your own

Try these variations:

Vanilla chai: add a small splash of vanilla after straining.

Orange-spiced tea: add a strip of orange peel while the spices simmer.

Caffeine-light version: use rooibos instead of black tea.

Extra-ginger version: double the fresh ginger and keep the cloves out.

Iced sparkling version: cool the strong spiced tea, pour over ice and top with a little sparkling water.

Serving ideas

Spiced tea with honey pairs well with breakfast, oat biscuits, toast, fruit or a simple afternoon snack. For a larger gathering, make the spiced tea base ahead, chill it and let guests add milk and honey to taste.

Frequently asked questions

Can you put honey in hot chai? Yes. Stir it in after brewing. If you want to follow the traditional convention of avoiding strongly heated honey, add it once the tea has cooled slightly.

How much honey should I add? Start with 1 to 2 teaspoons per cup and adjust after tasting.

Can I make this without milk? Yes. It works as a clear spiced black tea as well as a milky chai-style drink.

Can I make it ahead? Yes. Refrigerate the strained tea base, then serve cold or reheat gently. Add honey according to taste.

Honey must not be given to infants under 12 months. Check ingredients for relevant allergens.
