Frozen yoghurt bark is a simple make-ahead snack or dessert made by spreading yoghurt thinly, adding fruit and freezing until firm enough to break into pieces. Honey adds sweetness without needing a cooked syrup.

Estimated yield: 8 snack portions Estimated preparation: 10 minutes, plus 4 hours freezing

Recipe overview

This frozen yoghurt bark combines yoghurt, berries and honey in a thin frozen layer that can be broken into portions. Greek yoghurt gives the base body, berries add fruit flavour, and honey provides sweetness without a cooked syrup. Using Manuka turns it into Manuka honey frozen yoghurt bark, but the recipe does not depend on a particular MGO grade.

Ingredients

  • 500 g thick Greek-style yoghurt
  • 60 g Manuka honey, divided
  • 1 teaspoon vanilla extract
  • 150 g mixed berries, sliced if large
  • 30 g chopped pistachios or almonds, optional

Method

  1. Line a flat tray or small baking dish with baking paper.
  2. Stir 40 g of the honey and the vanilla into the yoghurt.
  3. Spread the yoghurt about 1 cm thick on the lined tray.
  4. Scatter over the berries and nuts, if using.
  5. Drizzle the remaining honey lightly over the top.
  6. Freeze until completely firm, approximately 4 hours.
  7. Break or cut into pieces and return immediately to the freezer until serving.

Can I use frozen berries?

Yes, but they can release more moisture and colour as they thaw. Add them while still frozen and keep the bark frozen until serving.

Can I use regular honey?

Yes. Another honey can be substituted according to taste. If you want more Manuka ideas, see our Manuka Honey Recipes and Berry, Yoghurt and Manuka Honey Smoothie.

Is frozen yoghurt bark a “health food”?

It is better to describe what is actually in the recipe than apply a broad health label. This version contains yoghurt, fruit, honey and optional nuts. Honey is still a source of sugars, so portion size matters like it does with other sweet foods.

Storage

Store pieces in an airtight freezer container with baking paper between layers. For best texture, eat directly from frozen rather than repeatedly thawing and refreezing.

Important honey safety note

Honey should not be given to infants under 12 months. See When Can Babies Have Honey? for the Australian guidance.

For measuring honey accurately, see Honey Measurements.

Allergen note: contains milk and may contain tree nuts depending on toppings.

Recipe note: This recipe has been developed for home cooking but has not yet been independently kitchen-tested by Australian Honey Company. Results may vary with ingredients, equipment and cooking conditions.
