How to Store Honey Correctly

Keep honey at its best with simple guidance on containers, temperature, sunlight, moisture and crystallisation.

Short answer: Store honey tightly sealed in a clean food-grade container, in a cool, dry cupboard away from direct sunlight and strong heat. Keep moisture and wet utensils out of the jar. Refrigeration is not normally required.

Choose a stable cupboard

A pantry or cupboard away from the oven, cooktop and sunny windows is suitable. Stable room conditions help preserve the honey's colour, aroma and texture better than repeated heating and cooling.

Keep the container closed and dry

Honey readily attracts moisture from the air, so replace the lid promptly and make sure it seals properly. Always use a clean, dry spoon or honey dipper. Water introduced into the jar can affect storage stability.

Avoid unnecessary heat and refrigeration

Strong heat can darken honey and alter its flavour. Refrigeration is not usually needed and may make the honey thicker or encourage crystallisation. If the product label gives specific instructions, follow those directions first.

Crystals are normal

Natural honey may crystallise during storage. To restore a more liquid texture, warm the closed jar gently in warm water. Avoid boiling or microwaving the container unless its packaging explicitly says it is safe to do so.
