Honey-spiced roasted nuts are crunchy, lightly glazed and easy to make for entertaining, gifting or snacking. Cardamom and cinnamon give this version a warm aromatic profile without making it taste like a dessert.

The trick is to use enough honey to coat the nuts, but not so much that they stay sticky after cooling.

Ingredients

Makes about 3 cups:

  • 150 g raw almonds
  • 150 g raw cashews
  • 100 g pecans or walnuts
  • 2 tablespoons honey
  • 1 tablespoon neutral oil or melted butter
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • 1/2 teaspoon fine salt
  • pinch of cayenne or black pepper, optional

Method

  1. Heat the oven to 160°C fan-forced or 180°C conventional.
  2. Line a large baking tray with baking paper.
  3. Warm the honey and oil or butter just enough to make them easy to mix.
  4. Toss the nuts with the honey mixture, cinnamon, cardamom, salt and optional cayenne.
  5. Spread in a single layer on the tray.
  6. Roast for 12 to 16 minutes, stirring once halfway through.
  7. Watch closely near the end because honey can darken quickly.
  8. Remove from the oven and separate any large clusters while the nuts are still warm.
  9. Cool completely before storing; they become crisper as they cool.

How do you make honey roasted nuts crispy?

Use a moderate amount of honey, spread the nuts in one layer and let them cool completely before putting them in a container.

If too much honey is used, the coating can remain tacky. If the tray is crowded, the nuts steam rather than roast evenly.

Can you roast nuts with honey?

Yes, but honey browns faster than plain nuts, so a moderate oven is better than very high heat. Stirring halfway through also helps prevent dark spots.

Which nuts work best?

Almonds and cashews are sturdy and reliable. Pecans and walnuts toast quickly and add richer flavour. Pistachios can be included, but add them later if they are already roasted.

A mixed tray is visually appealing, but try to choose nuts of similar size so they roast at a similar rate.

Spice variations

Chai-style: cardamom, cinnamon, ginger and the tiniest pinch of clove.

Savoury-spicy: smoked paprika, black pepper and cayenne with honey.

Orange-cardamom: add finely grated orange zest after roasting.

Rose-cardamom: once cool, toss with a very small amount of dried food-grade rose petal.

Storage

Once completely cool, store the nuts in an airtight container in a cool dry place. For longer storage in warm weather, refrigerate them and bring to room temperature before serving.

Frequently asked questions

Do honey roasted nuts stay sticky? They should become mostly dry once cool if the honey coating is light. A heavy coating will stay stickier.

Can I make them without oil? Yes, but a small amount of oil or butter helps the spices coat the nuts evenly.

Can I double the recipe? Yes, but use two trays so the nuts remain in a single layer.

Can I use already roasted nuts? Yes. Reduce the oven time and watch them carefully so they do not over-toast.

Honey must not be given to infants under 12 months. Check ingredients for relevant allergens.
