A good honey mustard dressing needs three competing elements: mustard heat, honey sweetness and acid. Oil then carries those flavours across salad leaves and helps create a smooth texture. The recipe starts equal in honey, mustard and vinegar by volume, then doubles the oil.

This recipe is designed around measured honey rather than treating honey as an unlimited 'healthy' sweetener. Honey still contributes sugars and energy, so the amount is chosen for flavour, browning and texture. For broader context, read honey versus sugar and calories in honey.

Recipe development note: This is an original recipe draft. The method, timings, yield, substitutions and storage notes have not been kitchen-tested or laboratory-validated. Test before publishing and keep this note until that work is documented.

If you prefer balsamic vinegar as the main acidic ingredient, our honey balsamic vinaigrette offers a different dressing balance rather than repeating this mustard-led version.

Honey mustard dressing

Makes/serves: About 180 mL, roughly 8 servings

Estimated time: preparation 10 minutes; cooking 0 minutes; additional/resting 0 minutes; total 10 minutes.

Equipment: Medium bowl; Whisk; Clean jar for short refrigerated storage.

Ingredients

  • 40 mL Dijon mustard
  • 40 mL honey
  • 40 mL apple cider vinegar
  • 80 mL extra-virgin olive oil
  • 1 small garlic clove, finely grated, optional
  • 1/4 teaspoon fine salt
  • Black pepper, to taste

Method

  1. Whisk Dijon, honey, vinegar, garlic if using, salt and pepper until smooth.
  1. While whisking continuously, pour in the olive oil slowly until the dressing looks cohesive.
  1. Taste on a lettuce leaf rather than straight from the spoon. Adjust with small measured amounts of vinegar, honey or water.
  1. Use immediately or transfer to a clean jar and refrigerate. Whisk or shake before serving.

Allergen and ingredient notes: Mustard can be an allergen for some people. Check all condiment labels for allergens and additives relevant to you.

Australian kitchen note: quantities are primarily given by weight or millilitres to reduce ambiguity. Where a teaspoon is used it means 5 mL; where a tablespoon is used it means 20 mL.

Why the method is built this way

Whisk the honey into the mustard before adding oil. This gives the mixture a stable base. Add oil gradually, especially during testing, because dumping it in all at once can leave the dressing visibly separated. Separation is not necessarily unsafe, but it changes texture and dosing.

Which honey should you use?

A mild floral honey keeps the mustard prominent. A darker, stronger honey can make the dressing more assertive and may suit roasted vegetables or grain salads. Use the same measured amount first so you can compare flavour fairly.

If you want to compare floral character, divide a neutral component of the recipe and taste it with two measured honeys before committing the whole batch. That is a home tasting exercise, not a claim that one floral source is universally best. See Jarrah honey recipes for more context. See honey calories for more context.

Variations and substitutions

For a creamier version, test a spoonful of plain yoghurt in a portion rather than the full jar; this adds milk allergen and shortens practical storage. For a thinner dressing, whisk in water 5 mL at a time. Wholegrain mustard can replace part of the Dijon for texture.

Treat every substantial substitution as a new test. Changing moisture, fat, flour, sweetener or cooking equipment can alter browning, texture, food safety and yield. If you plan to publish a gluten-free, dairy-free, vegan or allergen-related variation, verify the actual ingredient labels and production environment rather than relying on the recipe name. Australian allergen declarations identify specific allergens including wheat, milk, egg, soy, peanut and individual tree nuts. 9

Serving ideas

Use on green salads, grain bowls, roasted carrots or as a dipping sauce only if the thickness suits. It also makes a useful starting point for a separate honey mustard chicken recipe. Try honey mustard chicken next. Try honey roasted carrots next.

Storage and food safety

Because this contains fresh garlic and water-containing condiments, keep refrigerated. A conservative draft instruction is to make small batches and use within several days, but the exact shelf life has not been validated. Discard if contaminated or if quality changes unexpectedly. For perishable foods, refrigerate promptly and do not rely on honey itself to preserve a finished dish. FSANZ's 2-hour/4-hour rule explains how cumulative time between 5 C and 60 C affects whether refrigerated food can be returned to the fridge, used immediately or discarded. 8

Do not give honey or foods containing honey to babies under 12 months. Healthdirect identifies infant botulism as the reason. 6

Frequently asked questions

Why did my honey mustard dressing separate?

Oil and water phases can separate over time. Shake or whisk before serving. If you want a more persistent emulsion, that requires separate formulation testing.

Can I use wholegrain mustard?

Yes, but the dressing will be more textured and possibly less sharp depending on the brand. Test a half-Dijon, half-wholegrain version first.

Can I use this as a marinade?

You can develop a marinade, but any dressing that contacts raw meat must not be reused as a ready-to-eat sauce unless it is thoroughly cooked. Keep a clean portion separate.

Before publishing this recipe

Kitchen-test the recipe at least twice with the actual products and equipment you plan to specify. Record final yield, actual times, photographs, texture, sweetness, storage observations and any changes. Do not add star ratings, nutrition panels or health claims unless they are genuinely supported. Australian food health claims are regulated and require appropriate substantiation. 4
