Honey hot chocolate is exactly what it sounds like: a homemade cocoa drink in which honey provides the sweetness instead of ordinary table sugar. The result can be rich and comforting without becoming excessively sweet, and different honeys can add subtle flavour of their own.

This recipe uses unsweetened cocoa powder, so you control the sweetness from the beginning.

Ingredients

For 2 mugs:

  • 500 mL milk or unsweetened plant milk
  • 2 tablespoons unsweetened cocoa powder
  • 30 g dark chocolate, finely chopped, optional but recommended
  • 1 to 2 tablespoons honey, to taste
  • 1/2 teaspoon vanilla extract
  • small pinch of salt
  • pinch of cinnamon, optional

Method

  1. Put the cocoa powder in a saucepan and whisk in a few tablespoons of the milk to make a smooth paste.
  2. Gradually whisk in the remaining milk.
  3. Add the chopped dark chocolate and salt.
  4. Warm over medium-low heat, whisking until the chocolate is melted and the drink is steaming.
  5. Remove from the heat and stir in vanilla.
  6. Let the drink cool slightly, then stir in honey to taste.
  7. Pour into mugs and serve immediately.

Can you sweeten hot chocolate with honey?

Yes. Honey dissolves easily in a warm cocoa drink and gives sweetness with a slightly more aromatic finish than white sugar.

Because honey tastes sweeter and more distinctive than plain sugar, start with a smaller amount and add more only after tasting.

Does honey taste good with cocoa?

Cocoa's bitterness works especially well with honey. Mild honey keeps the chocolate flavour front and centre, while a stronger honey can add a more noticeable caramel, floral or herbal character.

If you are using a distinctive premium honey, try the drink with less dark chocolate so the honey is not completely hidden.

Do you need both cocoa and chocolate?

No. Cocoa powder alone makes a lighter, straightforward hot chocolate. Adding a little chopped dark chocolate creates a rounder texture and deeper flavour.

If your chocolate already contains sugar, you may need less honey.

Honey hot chocolate without refined sugar

If your goal is simply to avoid adding white sugar, use unsweetened cocoa and choose an unsweetened milk. Remember that honey is still a source of sugars, so “sweetened with honey” does not mean sugar-free.

That distinction is useful both nutritionally and for honest labelling.

Easy variations

Cinnamon hot chocolate: add 1/4 teaspoon cinnamon while heating.

Orange chocolate: add a strip of orange peel while the milk warms, then remove before serving.

Chilli chocolate: add the tiniest pinch of chilli powder for warmth.

Cardamom hot chocolate: add a pinch of ground cardamom for an Indian-inspired variation.

Iced version: chill the prepared drink completely and serve over ice.

Serving ideas

Serve honey hot chocolate with toasted sourdough, plain biscuits or fresh fruit. If adding whipped cream or marshmallows, remember they contribute extra sweetness, so keep the drink itself less sweet.

Frequently asked questions

Can I use honey instead of sugar in hot chocolate? Yes. Start with 1 to 2 teaspoons per mug and adjust after tasting.

When should I add the honey? After the drink comes off the heat. It dissolves easily while the cocoa is still warm.

Can I make it dairy-free? Yes. Unsweetened oat, soy or almond milk can all work.

Is honey hot chocolate sugar-free? No. Honey contains sugars. The recipe simply uses honey instead of adding table sugar.

Honey must not be given to infants under 12 months. Check ingredients for relevant allergens.
