Honey-glazed salmon is a fast dinner because the glaze cooks in the same time window as individual fillets. The key is keeping the honey proportion moderate so the surface browns without turning into a burnt sugar layer.

This recipe is designed around measured honey rather than treating honey as an unlimited 'healthy' sweetener. Honey still contributes sugars and energy, so the amount is chosen for flavour, browning and texture. For broader context, read honey versus sugar and calories in honey.

Recipe development note: This is an original recipe draft. The method, timings, yield, substitutions and storage notes have not been kitchen-tested or laboratory-validated. Test before publishing and keep this note until that work is documented.

Honey-glazed salmon

Makes/serves: 4

Estimated time: preparation 10 minutes; cooking 15 minutes; additional/resting 0 minutes; total 25 minutes.

Equipment: Baking tray; Baking paper; Small bowl; Food thermometer if available.

Ingredients

  • 4 skin-on or skinless salmon fillets, about 150 g each
  • 40 mL honey
  • 20 mL reduced-salt soy sauce
  • 20 mL Dijon mustard
  • 15 mL lemon juice
  • 1 garlic clove, finely grated
  • 1 teaspoon olive oil
  • Black pepper, to taste
  • Lemon wedges, to serve

Method

  1. Heat oven to 200 C conventional. Line a tray with baking paper.
  1. Whisk honey, soy, mustard, lemon juice and garlic in a small bowl.
  1. Place salmon on the tray. Brush lightly with olive oil and season with pepper. Spoon about two-thirds of the glaze over the fillets.
  1. Bake for about 10 minutes, then brush with the remaining clean glaze. Continue cooking until the salmon reaches the desired safe doneness; use a thermometer where practical.
  1. Rest for 2 minutes and serve with lemon wedges.

Allergen and ingredient notes: Contains fish, soy and mustard. Check condiment labels for wheat or other allergens relevant to you.

Australian kitchen note: quantities are primarily given by weight or millilitres to reduce ambiguity. Where a teaspoon is used it means 5 mL; where a tablespoon is used it means 20 mL.

Why the method is built this way

Reserve part of the glaze before it touches raw fish so the finishing brush remains clean. Fillet thickness matters more than weight alone, so cooking time is an estimate. Use a thermometer and visual cues rather than relying on minutes only.

For fish, NSW Food Authority lists 63 C as a safe internal temperature. 11

Which honey should you use?

A medium-flavoured honey is versatile with salmon. Jarrah can add a deeper note that stands up to soy and mustard. A delicate honey may be harder to distinguish once the glaze is baked.

If you want to compare floral character, divide a neutral component of the recipe and taste it with two measured honeys before committing the whole batch. That is a home tasting exercise, not a claim that one floral source is universally best. See honey mustard dressing for more context. See Jarrah honey recipes for more context.

Variations and substitutions

For a chilli version, add a small pinch of dried chilli or serve with a drizzle of tested hot honey at the table. For a soy-free version, develop a separate sauce rather than simply omitting the salty liquid.

Treat every substantial substitution as a new test. Changing moisture, fat, flour, sweetener or cooking equipment can alter browning, texture, food safety and yield. If you plan to publish a gluten-free, dairy-free, vegan or allergen-related variation, verify the actual ingredient labels and production environment rather than relying on the recipe name. Australian allergen declarations identify specific allergens including wheat, milk, egg, soy, peanut and individual tree nuts. 9

Serving ideas

Serve with steamed greens, rice, roast potatoes or honey-roasted carrots. A cucumber and herb salad gives a cool contrast to the glaze. Try honey roasted carrots next. Try hot honey recipe next.

Storage and food safety

Cool leftovers promptly and refrigerate. Fish is highly perishable, so use a conservative short refrigerated window and reheat safely if desired; do not infer storage life from the honey in the glaze. For perishable foods, refrigerate promptly and do not rely on honey itself to preserve a finished dish. FSANZ's 2-hour/4-hour rule explains how cumulative time between 5 C and 60 C affects whether refrigerated food can be returned to the fridge, used immediately or discarded. 8

Do not give honey or foods containing honey to babies under 12 months. Healthdirect identifies infant botulism as the reason. 6

Frequently asked questions

Can I cook this in an air fryer?

Possibly, but the smaller hot chamber can brown honey quickly. Test a separate air-fryer method with a lower quantity of glaze at the start and monitor closely.

Can I use frozen salmon?

Thaw safely in the refrigerator or according to package directions before using this draft method. Do not thaw perishable fish at room temperature.

Why is my glaze watery?

Salmon releases moisture as it cooks. A crowded tray or very wet fish can dilute the glaze. Pat the surface dry and give the fillets space.

Before publishing this recipe

Kitchen-test the recipe at least twice with the actual products and equipment you plan to specify. Record final yield, actual times, photographs, texture, sweetness, storage observations and any changes. Do not add star ratings, nutrition panels or health claims unless they are genuinely supported. Australian food health claims are regulated and require appropriate substantiation. 4
