A coconut water, lime and honey cooler is a simple summer drink with a clean sweet-sour balance. Coconut water provides a mild base, fresh lime brings acidity, and a small amount of honey rounds out the sharpness.

It is quick enough to make by the glass and easy to scale for a jug.

For another approach, see our homemade honey lemonade, or explore the passionfruit iced tea for related guidance.

Ingredients

For 2 glasses:

  • 500 mL chilled coconut water
  • 30 mL fresh lime juice, about 1 to 2 limes
  • 1 to 2 teaspoons honey, to taste
  • 1 tablespoon warm water
  • ice
  • lime slices or fresh mint, optional

Method

  1. Stir the honey into the warm water until completely dissolved.
  2. Pour the coconut water and lime juice into a jug.
  3. Stir in the honey mixture.
  4. Taste and adjust with extra lime or a little more honey if required.
  5. Pour over plenty of ice.
  6. Garnish with lime or mint if you like.

Why dissolve the honey first?

Honey does not mix as quickly into very cold liquids as it does into warm ones. Making a quick honey syrup with a spoonful of warm water prevents it from sinking to the bottom of the glass.

You can use the same trick for iced tea, lemonade and other cold honey drinks.

Can you put honey in coconut water?

Yes. Coconut water is mildly sweet already, so you only need a small amount. Start with one teaspoon for two glasses and increase after tasting.

The ripeness and brand of coconut water can change the sweetness significantly, which is why tasting first is more useful than following a rigid amount.

Lime, lemon or both?

Lime gives the most tropical flavour, but lemon works too. A combination of lime and lemon makes the drink brighter and less recognisably coconut-forward.

If the citrus is very sharp, add a little more coconut water before reaching for extra honey.

Flavour variations

Mint cooler: muddle a few mint leaves gently in the jug.

Ginger lime cooler: add a few thin slices of fresh ginger and let the drink stand in the fridge for 20 minutes.

Sparkling version: replace half the coconut water with chilled sparkling water just before serving.

Cucumber version: add thin cucumber ribbons for a clean, refreshing finish.

Chilli-lime version: add one very thin slice of fresh chilli for a subtle kick.

Is this a sports drink?

It is better described as a refreshing homemade drink. Coconut water naturally contains electrolytes, but the exact amounts vary by product, and a homemade cooler should not be marketed as a substitute for medical rehydration advice or a formulated sports product.

Enjoy it because it tastes good and is easy to make.

Make-ahead and storage

Mix the coconut water, lime and dissolved honey a few hours ahead and keep refrigerated. Add ice only when serving so the drink does not become diluted.

If adding sparkling water, wait until the last moment.

Frequently asked questions

How do I dissolve honey in a cold drink? Mix it first with a tablespoon of warm water, then stir that into the cold liquid.

Can I use bottled lime juice? Fresh lime gives the best aroma, but bottled juice can work in a pinch.

Can I make a large batch? Yes. Multiply the ingredients and adjust lime and honey after tasting.

Can children drink it? For children over 12 months, it can be served as an occasional sweet drink. Honey should not be given to infants under 12 months.
